Snickerdoodles

1 cup vegan margarine, softened

1 1/3 cups granulated sugar

Equivalent of 2 eggs (I use 1/2 cup applesauce)

1 teaspoon vanilla extract

3 cups unbleached all-purpose flour

1 teaspoon baking soda

1 teaspoon cream of tartar

1/4 teaspoon salt

2 teaspoon ground cinnamon

3 tablespoons granulated sugar

Preheat oven to 375 degrees.
In large bowl of an electric mixer, beat margarine and the 1 1/3 cups sugar until creamy. Beat in egg replacers and vanilla.
In another bowl, stir together flour, baking soda, cream of tartar, and salt. Gradually add to margarine mixture, blending thoroughly.
Chill dough an hour, or until it can be rolled into balls.
In a small bowl, combine cinnamon and the 3 tablespoons sugar. Roll dough into 1-inch balls, then roll in cinnamon-sugar mixture to coat.
Place at least 2 inches apart on greased cookie sheet. Bake for about 12 minutes, or until lightly browned.
