Pumpkin Pie

2 8-inch pie crusts (either pastry or graham cracker)

1 can (14.5 ounces) pumpkin

1 cup sugar

1 teaspoon ground ginger

1 teaspoon ground cinnamon

1/2 teaspoon allspice

1/4 teaspoon nutmeg

1/2 teaspoon salt

1/2 cup applesauce

1 1/2 cups soymilk

Preheat oven to 400 degrees.
Mix sugar, ginger, cinnamon, allspice, nutmeg, and salt together in a large bowl. Add pumpkin and mix.
Add applesauce and soymilk. Mix thoroughly.

Pour mixture into unbaked pie crust. Bake at 400 degrees for 10 minutes.
Reduce heat to 350 degrees and bake another 50 to 60 minutes, or until knife inserted in the center comes out relatively clean.
Move to wire rack to cool. Once cool, move to refrigerator and let set overnight.
