Vegan RecipesThis Recipe by Anne Lynch, Vegan Personal Chef (Pittsburgh, PA): Anne@HealingArtsByAmethyst.comNutmeg Logs1 cup soy-based margarine, softened2 teaspoons vanilla extract 1 teaspoon brandy 3/4 cup granulated sugar Equivalent of one egg (I use 1/4 cup applesauce) 3 cups unbleached all-purpose flour 1 1/2 teaspoons nutmeg 1/4 teaspoon salt Frosting (recipe follows): Colored sugar, nutmeg to garnish Preheat oven to 350 degrees. Cream margarine with vanilla and brandy. Gradually beat in sugar, then blend in egg replacer. Mix together flour, nutmeg, and salt. Add to margarine mixture and mix well. If mix is a little dry, add some soymilk or soy creamer. Continue to mix until dough is able to be rolled. On a sugared board, break off 1-inch pieces of dough and roll into finger-sized pieces. Put onto greased cookie sheet. Bake for 9-12 minutes. Cool on racks. Spread with frosting then sprinkle with nutmeg or colored sugar, if desired. Frosting: 1/3 cup vegan margarine 1 teaspoon vanilla 2 teaspoons brandy 2 cups confectioner’s sugar 2 tablespoons liquid soy creamer Cream margarine with vanilla and brandy. Blend in confectioner’s sugar and soy creamer. Beat until smooth and creamy. This makes about double what you need for one recipe’s worth of logs, so you can either double the log recipe or freeze the remaining frosting. |
