Vegan RecipesThis Recipe by Anne Lynch, Vegan Personal Chef (Pittsburgh, PA): Anne@HealingArtsByAmethyst.comNew Potatoes with Herbs1 1/2 pounds tiny new red potatoes, scrubbed and left whole and unpeeled1 tablespoon olive oil 1 teaspoon Herbes de Provence, or your favorite herb blend 1 teaspoon salt Juice of one lemon Fresh pepper to taste Place the potatoes in a large saucepan with salted water to cover, and bring to a boil over high heat. Reduce heat to a gentle boil and cook until potatoes are just tender (about 10 minutes). Drain well and set aside to cool slightly. In a large skillet, heat oil over medium-high heat. Add the Herbes de Provence, and cook, stirring constantly, for about 10 seconds. Add the potatoes, salt, and lemon juice, and stir well to coat. Cook, tossing and stirring constantly, for 1-2 minutes. Season with pepper to taste and serve immediately. |
