Steamed Peas with Mint and Lemon

12-ounce package frozen baby peas
3 tablespoons lemon juice (about one lemon)
3 tablespoons water
3 scallions, slice thinly into rounds
2 tablespoons thinly sliced fresh mint
2 tablespoons olive oil
1 teaspoon salt

Combine the peas, lemon juice, and water in a small saucepan.
Bring to a simmer over medium heat. Cover and cook until peas are just tender and heated through, about 4 minutes.
Remove from heat and stir in the scallions, mint, olive oil, and salt.
