Anne's Not-So-Traditional
Vegan New Orleans Queen Cake

This recipe is my newer version of a traditional New Orleans King Cake - eaten during the Mardi Gras season.

Cake:
2 tablespoons granulated sugar
2 envelopes active dry yeast
7/8 cup warm water
1 stick soy-based margarine
7/8 cup soymilk
1/2 cup granulated sugar
2 teaspoons salt
1 cup applesauce
5 cups (at least!) unbleached all-purpose flour

Filling:
1/2 cup brown sugar
1 cup granulated sugar
2 tablespoons cinnamon
1 stick soy margarine, melted

Glaze:
3 cups confectioner's sugar
6 tablespoons soymilk or soy creamer
Colored sugar in purple, green, and gold

Combine 2 tablespoons sugar, yeast, and water in large bowl. Let stand until foaming.
Place margarine, soymilk, 1/2 cup sugar, and salt in small saucepan and melt slowly.
Add applesauce to foaming yeast mixture. Add soymilk mixture when lukewarm.
Mix in flour thoroughly, a cup at a time, until you reach five cups.
After that, add until the dough is no longer overly sticky (a little sticky is ok).
Knead for 5-10 minutes in the bowl. Remove dough from bowl, grease bowl with cooking spray,
and return dough to bowl, turning once to cover. Cover bowl with damp cloth and let rise in a warm place until doubled (1-2 hours).
While dough is rising, mix together brown sugar, 1 cup sugar, and cinnamon for filling. Set aside.

Punch down dough when doubled. Roll out to about 18" x 36". Brush dough with melted margarine, and sprinkle with the cinnamon filling.
Carefully roll up dough like a jelly roll, as tightly as possible, so you end up with a roughly 36" long strip.
Push ends together, forming a circle. Cover with a damp cloth and let rise until doubled again (about 1 hour).
Bake in a preheated 350 degree oven for 25-30 minutes. Cool on wire rack.
When cooled, mix confectioner's sugar with soymilk or soy creamer, forming a glaze.
Spread over top of cake and sprinkle with colored sugar in purple, green, and gold stripes.
