Vegan RecipesThis Recipe by Anne Lynch, Vegan Personal Chef (Pittsburgh, PA): Anne@HealingArtsByAmethyst.comIrish Soda Bread2 cups unbleached all-purpose flour4 tablespoons granulated sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup golden raisins 1 tablespoon caraway seeds Equivalent of one egg (I use 1/4 cup applesauce) 1/4 cup canola or vegetable oil 2/3 cup soymilk Preheat oven to 375 degrees. Lightly grease a round cake pan. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, raisins, and caraway seeds. Whisk together. In a separate bowl, whisk together the egg replacer, oil, and soymilk. Pour into dry ingredients and combine until moistened. Batter will be a bit sticky. Mound the batter into the pan, forming a rounded loaf in the center of the pan. Smooth out the surfaces as best you can. Bake in oven for 10 minutes, then remove and cut an equal-armed cross on top of loaf, about a 1/2 inch deep. Return to oven and bake another 15-20 minutes, until loaf is golden brown, and toothpick comes out clean. Place on a wire rack to cool before serving. |
