Vegan RecipesThis Recipe by AmethystAmethyst@HealingArtsByAmethyst.com Herbed Spinach3 cups fresh spinach leaves20 fresh mint leaves 1/4 teaspoon lemon thyme leaves (remove from stems) 1/2 Tablespoon fresh dill 3 teaspoons chopped onion 2 teaspoons chopped fresh garlic 3 large dandelion greens leaves, chopped and removed from stems Cook all ingredients on a large non-stick skillet for approximately 2 minutes or until leaves wilt and onions brown slightly. (Cook on medium-high heat, stirring constantly). Makes 3/4 Cup after cooking. Uses: Side Dish: Makes 1-2 servings Pasta Main Course: Add to 3 cups cooked pasta and sprinkle with lemon juice to make a main course, serves 1-2. Suggestions: Complimentary side dishes: Sliced Apples, Potato dish, and/or Veggie burgers Nutrition: According to various articles I found online: Spinach is a good source of Calcium, Magnesium, Iron, Potassium, Vitamins A, C, K and E, Dietary Fiber, Thiamin, Riboflavin, Vitamin B6, Folate, Zinc, Phosphorus, Niacin, Copper and Manganese, and is rich in carotenoids and antioxidants. That's just the spinach--the other ingredients in this recipe are also very healthy! I am not a nutritionist, so you may want to research for yourself to find more information. |
