Garlic-Herb Pita Crisps

(Serve with the Provencal Chickpea Puree!!!)
3 pita loaves (about 6-inches in diameter)
4 tablespoons olive oil
2 tablespoons finely chopped fresh parsley
1 tablespoon finely chopped fresh chives
2 large cloves garlic, minced
Dash of dried oregano and thyme
2 teaspoons salt

Preheat oven to 500 degrees. Cut pita into eighths, then separate each piece into two pieces along the fold.
Arrange in a single layer on ungreased cookie sheets, rough side up.
In a small bowl, combine oil, herbs, garlic, and salt. Using kitchen brush, spread mixture over pita pieces.
Bake on top rack of oven for 3-5 minutes (watch them – they will burn quickly!) until nicely toasted.
These tend to disappear fast, so double, triple, or quadruple the recipe!
