Vegan RecipesThis Recipe by Anne Lynch, Vegan Personal Chef (Pittsburgh, PA): Anne@HealingArtsByAmethyst.comFattoush (Lebanese Salad)1/4 cup lemon juice1/4 cup olive oil Dill and thyme to taste 1 cucumber, sliced and quartered 4 tomatoes, diced 6 scallions, sliced 1 head curly parsley, chopped Several green olives, halved 1 small can chickpeas, drained and rinsed Pita chips, toasted Mix lemon juice, olive oil, and herbs in a small bowl. Prepare vegetables as stated above. Toss together in a large bowl. Add pita chips and dressing, and toss to coat. Serve immediately. |
