Cranberry Orange Bread (or Muffins)

1 cup soymilk
1/3 cup vegetable oil
Zest from one orange
1/4 cup applesauce
1/8 teaspoon orange extract
2 cups flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup cranberries
1/2 cup walnut pieces, finely chopped (optional)

Preheat oven to 400 degrees.
Beat soymilk, oil, zest, applesauce, and orange extract in a large bowl. Stir in flour, sugar, baking powder, and salt until well combined.
Fold in cranberries and nuts, if using. Spoon batter into either greased muffin tins, or mini-loaf pans.
Bake 18-20 minutes (muffins) or 22-25 minutes (mini-loaves) or until golden brown. Remove from pan immediately and let cool on wire racks.
