Vegan RecipesThis Recipe by Anne Lynch, Vegan Personal Chef (Pittsburgh, PA): Anne@HealingArtsByAmethyst.comChocolate Chip Mint Cookies3/4 cup vegan margarine1/2 cup firmly-packed light brown sugar 1/2 cup granulated sugar Vegan Equivalent of one egg (I use 1/4 cup applesauce) 1 teaspoon vanilla extract 1 teaspoon mint extract 1 1/2 cups unbleached all-purpose white flour 1/4 cup unsweetened cocoa powder 1 teaspoon baking soda 1/4 teaspoon salt 1 bag (12 ounces) vegan chocolate chips Preheat oven to 350 degrees. Cream margarine and sugars together with an electric mixer on high speed. Beat in egg replacer. Stir in vanilla and mint extracts. Sift together the dry ingredients and add this to the margarine mixture along with the chocolate chips. Stir well until combined. Drop by rounded teaspoons onto a lightly greased cookie sheet. Bake 12 minutes. Remove from sheet immediately after baking and cool on a rack. |
