Vegan RecipesThis Recipe by Anne Lynch, Vegan Personal Chef (Pittsburgh, PA): Anne@HealingArtsByAmethyst.comChocolate Logs1/2 cup vegan margarine, softened1 cup granulated sugar Equivalent of one egg (I use 1/4 cup applesauce) 2 teaspoons vanilla extract 2 cups unbleached all-purpose flour 2 squares unsweetened baking chocolate, melted 1/2 teaspoon salt 3/4 cup walnuts, finely chopped Mix margarine, sugar, egg replacer, and vanilla thoroughly with hand mixer. Stir flour, chocolate, and salt into margarine mixture. Mix in nuts. Shape mixture into rectangle (about 12x18 inches) on a well-greased baking sheet. Smooth down with rolling pin. Cover with foil and chill until firm (at least three hours, overnight is better). Preheat oven to 375 degrees. Cut mixture into approximately 48 logs, about 4 inches by 1/2-inch. Place a little apart on greased baking sheet and bake for 10-12 minutes. Let cool on wire rack, then frost with vanilla-brandy frosting from the Nutmeg Logs recipe. Sprinkle with colored sugar (I like using green). |
