Vegan RecipesThis Recipe by Anne Lynch, Vegan Personal Chef (Pittsburgh, PA): Anne@HealingArtsByAmethyst.comChocolate Chip Muffins2 cups unbleached all-purpose flour1/3 cup firmly-packed light brown sugar 1/3 cup granulated sugar 2 teaspoons baking powder 1/2 teaspoon salt 2/3 cup soymilk 1/2 cup melted vegan margarine 1/2 cup applesauce (This is equivelant to 2 eggs) 1 teaspoon vanilla extract 1 package non-dairy semi-sweet chocolate chips Preheat oven to 400 degrees. Grease muffin tins with cooking spray. In a large bowl, stir together flour, sugars, baking powder, and salt. In another bowl, stir together soymilk, egg substitutes, margarine, and vanilla until blended. Make a well in center of dry ingredients; add soymilk mixture and chocolate chips and stir until combined. Spoon batter into prepared muffin tins, and bake 15-25 minutes, or until a toothpick inserted in the middle of a muffin comes out clean. |
