Chick-A-Bell in a Shell

1 can (15-oz.) chickpeas, drained and rinsed
2 tablespoons olive oil
1 onion, diced (optional)
1 clove garlic, minced
1 green bell pepper, diced
1 red bell pepper, diced
Ground cumin to taste (I use about a 1/2 teaspoon)
2 tablespoons fresh parsley
1 teaspoon dried mint
1 can (15-oz.) diced tomatoes
Salt and pepper to taste
Pita bread

Heat oil in saucepan and sauté the onion, garlic, and bell peppers for 5 minutes. Stir in the cumin and sauté for 1 minute.
Add chickpeas, parsley, mint, tomatoes, salt, and pepper, and bring to a simmer. Let simmer for 15-20 minutes, until the mixture is fragrant.
Take off the heat, let cool for 5 minutes, then stuff into pita bread halves.
