Vegan RecipesThis Recipe by Anne Lynch, Vegan Personal Chef (Pittsburgh, PA): Anne@HealingArtsByAmethyst.comBanana Bread2 soft, ripe bananas1 cup granulated sugar Pinch of salt Equivalent of one egg (I use 1/4 cup applesauce) 2 cups unbleached all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder A little soymilk, if needed Preheat oven to 320 degrees. Grease a loaf tin. Beat bananas, sugar, and salt thoroughly with a hand mixer. Add egg replacer and beat until fluffy. Sift dry ingredients together and add to banana mixture. Mix thoroughly. If batter seems a little dry, add a touch of soymilk. Pour into greased 9x5x3 loaf pan. Bake slowly in oven until brown, about 45-60 minutes (use toothpick test). |
