Vegan RecipesThis Recipe by Anne Lynch, Vegan Personal Chef (Pittsburgh, PA): Anne@HealingArtsByAmethyst.comApple Bread1/2 cup vegan margarine, softened 3/4 cup pure cane sugar 1/2 cup applesauce (this is equivelant to 2 eggs) 1 teaspoon vanilla 2 cups unbleached all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1/3 cup orange juice 1 cup chopped cooking apples (no need to peel) 1/3 cup choppped walnuts (optional) Preheat oven to 350 degrees. In mixer, cream margarine and sugar. Add egg substitutes and vanilla. Combine flour, baking soda, and salt. Add to mixture and alternate with orange juice. Add apples and walnuts. Turn into greased 9x5 loaf pan. Bake for about 1 hour, or until toothpick inserted in middle comes out clean. Cool on wire rack, and serve. |
